Spaghetti and Meatball Recipe

Spaghetti and Meatballs Recipe

Ingredients

Sauce
  • 2 Tbsp extra virgin olive oil
  • ½ chopped sweet yellow onion
  • 3 cloves chopped garlic
  • 1 cup very finely chopped carrots
  • 1 cup chopped crimini brown mushrooms
  • 2 28-oz cans Italian plum tomatoes (get San Marzano brand if possible)
  • ¼ cup chopped fresh Italian parsley
  • ¼ cup chopped fresh basil
  • 3 Tbsp tomato paste concentrate in tube
  • ¼ cup grated parmesan-romano cheese blend
  • Salt to taste (about 1 teaspoon)
  • ¼ cup red wine
Meatballs
  • 1 lb ground beef (at least 16% fat)
  • ½ lb fresh bulk Italian style pork sausage
  • 2 tablespoons finely chopped basil
  • 2 tablespoons finely chopped fresh Italian parsley
  • ½ cup finely chopped crimini brown mushrooms
  • 2 eggs
  • ¾ cup unseasoned bread crumbs
  • ¼ cup grated parmesan-romano cheese blend
  • 2 teaspoons sea salt
  • 2 teaspoons fresh ground black pepper
  • 1 Tbsp olive oil
  • Red wine
Spaghetti
  • 1 1/2 lbs dry 100% semolina spaghetti or thin spaghetti

Method

1 Prepare the sauce. Heat olive oil in 4-5 quart pot on medium-high heat. Add onions and cook for 2 minutes. Add garlic and cook for 1 minute. Add carrots and mushrooms, blend together for 2 minutes. Add canned tomatoes, stir together. Add basil and parsley, stir tomatoes with a potato masher until sauce starts to thicken about 5 minutes over medium high heat. Add tomato paste concentrate, stir to blend. Reduce heat and simmer while preparing meat balls, stirring occasionally.
2 Prepare the meatballs. Mix by hand in a large bowl beef, Italian sausage, basil, parsley, mushrooms, eggs, breadcrumbs, cheese, herbed salt, and pepper until well mixed. Use small melon baller, or teaspoons to form 1-inch round meat balls. Roll and compress into tight balls.
3 Heat frying pan on high heat. Add olive oil. Sear and brown meat balls on all sides. About 2-3 minutes. Depending on pan size you may need to brown two batches of the meatballs. Do not crowd the pan by stacking the meatballs. Cook in a single layer. Do not over-cook. As meatballs are finishing, add a little bit of red wine to de-glaze pan.
4 Add ¼ cup red wine to the sauce. Then stir in ¼ cup cheese. Add salt to taste. Add meatballs, gently stir. Simmer sauce and meatballs for 30-45 minutes, stirring occasionally.
5 While the sauce is simmering, bring a large pot with 4 quarts of water in it to a boil. Once the water is boiling, add 1 Tbsp of salt. When the water returns to a boil add the pasta to the pot. Leave the pot uncovered while you cook the pasta on high heat with a vigorous boil. Put a timer on for 8-10 minutes, or whatever your pasta package directions say is appropriate for al dente (cooked but still a little firm). Drain.
To serve, place thin layer of sauce on plate, add pasta, add sauce and meatballs, sprinkle with grated parmesan-romano cheese.

Price tAG LYRICS

Seems like everybodys got a price,
I wonder how they sleep at night.
When the tale comes first,
And the truth comes second,
Just stop, for a minute and
Smile:)

Why is everybody so serious!
Acting so damn mysterious You got your shades on your eyes
And your heels so high
That you can't even have a good
Time.

Pre-chorus:
Everybody look to their left (yeah)
Everybody look to their right (ha)
Can you feel that (yeah)
Well pay them with love tonight...

Chorus:
It's not about the money, money, money
We don't need your money, money, money
We just wanna make the world change,
Forget about the Price Tag.
Ain't about the (ha) Ka-Ching Ka-Ching.
Aint about the (yeah)
Ba-Bling Ba-Bling
Wanna make the world change,
Forget about the Price Tag.

Skinny Jeans

It seems that everywhere I look, more and more women are wearing skinny jeans again, paired off with all kinds of tops. Skinny jeans are an interesting type of jeans because they fit tightly in the legs, almost like a pair of tights, only it’s jeans of course.

Lots of skinny jeans can be found in the market, from the bargains to the designer ones. Unfortunately not everyone can wear skinny jeans because we all have different body types. However, it can definitely enhance body types like straight bodies because skinny jeans emphasize the buttocks and hip area, creating a sexier overall illusion. Petite women can also wear skinny jeans to look longer. Modelesque body types with long slender legs can wear them like a second skin anytime. But if you’re pear-shaped or a bit too heavy on the legs, better ditch skinny jeans because they can really be a disaster. There are lots of other types of jeans in the market anyway so don’t be sad.

Swim and Heal

Much has been said about the good things our body can get from swimming, as the seemingly innocent gliding and moving in the water is supposed to be a total body workout. Since the actual benefits of swimming are still a bit vague to me, I looked for more specific answers to why it’s good for us in more ways than one. Check out what I found:

1. It strengthens the heart, lungs and muscles.
Swimming conditions all body types, from the perfectly normal ones to those plagued with alarming conditions like diabetes, high blood pressure, or arthritis. In fact, doctors often recommend swimming as an activity to those recovering from a major surgery or heart operation because it is a not too taxing yet effective workout. Regular swimming also builds lung stamina and muscle strength without straining connective tissues like other workout activities could.

2. It’s a great calorie-burner.
Swimming uses all the major muscle groups in the body, which makes it a great weight loss workout and body toner. This is why many swimmers often have toned arms, legs, and tummy, which is one of the major fat problem areas of everyone.

3. It’s the perfect stress reliever.
Swimming is a meditative workout because it deals with not just the body but also the mental state. Exercising while enveloped in warm water induces a calm and relaxing feeling that not only reduces stress, it also help clear one’s mind as it improves delivery of oxygen to all muscles and stimulates blood circulation.

4. It works wonders in pregnant women.
Expectant women are often forbidden to do any moderate to heavy physical activity, but swimming is one of those activities that can actually aid them in their condition. For one, it strengthens the abdominal muscles that are very important when carrying and delivering the baby. Experts say that swimming also reduces the common negative symptoms associated with pregnancy, like high blood pressure and stiffness.

5. It’s a perfect bonding activity.
Now we all know about this one. Swimming is one of the best and healthiest activities we can do to bond and enjoy with our families and friends. The great thing about swimming as a bonding activity is that you can choose to talk and interact with people yet you can also swim off anytime and do your routines and beneficial exercises whenever you want.

Precaution on Make up

In a previous post I gave a few makeup tips for summer. For this entry I’m giving just a few reminders that I’ve read about on how we can best make use of our makeup to ensure that we maximize their purpose and to protect us as well.
1. Throw away mascara after 2-3 months. This is because sty-triggering germs may have formed on your mascara by this time and it’s best to dispose of it. Also, if you start to get eye infections whenever you put eye makeup on, then make sure to dispose of any eye makeup you’ve recently used but have kept stashed for so long.
2. Clean all your primping tools at least once a week. Never forget to wash all your sponges and brushes with a mild cleanser to remove all germs that may inhabit in it. Also, swipe all your lash curlers with cotton dipped in alcohol to get rid of any bacteria or leftover makeup. Remember to keep all your tools in a safe and sealed box or container and never leave them lying around, which many women are prone to do when in a hurry.
